Fresh & Green Morning Smoothie

Picked the first fresh mint leaves from the garden this morning- spring is well and truly here. What a beautiful day! Starting it with a green, veggie packed smoothie with a boost of vitamins and nutrients essential for health and well-being.

Ingredients: You can mix and match your greens depending what you have in your fridge/ freezer, and you dont need to be exact with quantities.

Serves 2 (large glasses)

2 large handfuls of Spinach, Chard, or Kale (or a mix)

30g fresh Parsley including stalks (curly or flat)

2 sticks of Celery

1/3-1/2 Cucumber

1/2-1 Avocado

juice of 1/2 Lime

10ish mint leaves

approx 250ml Coconut Water and 150ml filtered tap water to make 400ml liquid

If you don’t have coconut water use all water but you may want to add a chopped apple to the mix for a little sweetness

1 level tsp Spirulina (optional nutrient boost)

Method:

Wash all leaves, celery, cucumber, parsley and mint. Peel and stone the avocado and place into a blender with all the other ingredients and blend until smooth. If using frozen spinach I normally use 3 cubes per recipe.

You can swap the mint for fresh ginger for a zing!  2cm cube piece chopped straight into the blender.
