Easy peasy ice-cream

This used to be my little secret but know its all over the internet and Mary Berry has even used this recipe in her latest cooking series! So the secret’s out and I’ll share it with you.

It has only 2 ingredients then its up to you how you want to flavour it. The picture shows Cherry and Amaretto with crushed Amaretti biscuits, but I also make Orange and Honeycomb, Pistachio and Cardamom, Mango swirl, Vanilla and Choc Chip, Rocky Road…. the list goes on!

Ingredients for base Vanilla Ice-cream:

500ml double cream

1 tin condensed milk (not evaporated milk)

1 tsp vanilla extract

Method:

Place all ingredients in a large bowl and whisk using an electric whisk until you have soft peaks. Be careful not to overwhip! Fold in any other ingredients you want to flavour it with and freeze for at least 4 hours.

Some Flavourings you could use:

1/2 tin cherry pie filling, 2 tbsp amaretto, 8 crushed amaretti biscuits.

Zest of an Orange, 1/2tsp orange extract, 4 tbsp crushed honeycomb.
