Mixed Bean Chilli

Hi this bean chilli is also great in wraps, tortillas or in lettuce ‘cups’

Ingredients:

1 tin mixed beans/mixed pulses

1 small onion chopped

1 clove garlic finely chopped

1tbsp oil (I use coconut or avocado)

1 level tsp ground cumin

1 level tsp ground coriander

1 tsp hot chilli smoked paprika

or 1/2 tsp hot chilli powder and 1tsp sweet paprika (smoked or unsmoked)

about 250ml passata

salt and pepper to taste

1 tablespoon freshly chopped coriander (optional)

Method:

Fry the onions and garlic in a pan with the oil until soft. Add the spices and cook gently for a couple of minutes. Mix in the drained contents of the tin of beans and the passata. Cook gently until beans are warmed through.  Season add coriander. This can be eaten hot or cold. You can add a little water or more passata to make more of a sauce if desired if you want the chilli warm to eat with rice.
