Ah the humble swede- besides mashed carrot n swede I’ve not really had it in any other form. I’ve been getting one in my veg box so I tried a soup today- Swede and Ginger- 2 small onions or 1 large one diced, a thumb size piece of ginger finely grated, 2 swede diced. 1 1/2 pints homemade stock or water, 1 bay leaf., 1/2 tsp ground cumin, 1/2 tsp ground coriander, salt and pepper. Lightly fry onion and ginger add swede stock and bay leaf. Boil then simmer until swede is soft ( about 10mins) blend and season to taste. Serves 4-6.
