Rich, mildly spiced and slightly fruity slow cooked lamb. A good one to come home to after a busy day.
Serves 4-5.
Ingredients:
500g-700g diced Lamb
1 large onion finely diced
1 heaped tsp of each of the following spices- ground ginger, ground cumin, ground coriander, paprika
1 or 2 or more! red chillis dependant on how spicy you like it
2 large tbsps of tomato puree
1 glass of white wine
6-8 dried apricots chopped
300ml water
400g tin of chickpeas drained
2-3 heaped tbsp of chopped fresh coriander
Pomegranate seeds (optional)
Method:
This is so easy! Put everything in the slow cooker on low and leave for 5-7hrs. Before serving check if more water is needed and add salt to taste. Finally sprinkle on the fresh coriander and serve with your choice of rice, cous-cous or quinoa and roasted veg. Top with pomegranate seeds.
