This version uses Indian spices and sweet chestnuts. Nutritional yeast flakes can be added to boost B-vitamins, this is especially a good addition for vegans. The flakes have a herby parmesan flavour.
2 small cauliflowers or 1 large, grated or finely chopped in a food processor
1 tbsp of coconut oil,
½ tsp of turmeric
½ tsp of cumin
½ tsp salt
1 bag vacuum packed chestnuts, chopped coarsely
1 tsp mixed seasoning such as lemon & thyme
1tbsp of nutritional yeast flakes (optional)
splash of water
Serves 4-6
Melt the coconut oil in a pan over a medium heat then and add the spices and seasoning, add the chestnuts and the cauliflower mix to coat in the spices. Add a large splash of water and cover. Cook over low for 5 minutes, stir well and add the nutritional yeast. Cook for a further 2-3 mins.
You could add dried cranberries and chopped herbs such as parsley or coriander, anything goes really. Let me know how you like yours.
