Chia Fruit Jam

You can make this Jam in 15 minutes and it sets in the fridge. No need to boil fruit with tonnes of sugar. Simply blend all the ingredients and pour into a jar.

180g of soft fruit like blueberries, raspberries, strawberries (you can use frozen – defrost before use)

2 1/2 tbsp of chia seeds (black or white)

1-2tsps of honey, or maple syrup

1/2 tsp vanilla extract and a squeeze of lemon (optional)

Put all the ingredients into a blender and whizz until berries are mashed up. Have a quick taste and add a little more honey or a squeeze of lemon juice to taste

Pour into a glass jar and leave to set in the fridge for a few hours.

Makes one 400g jar. This will keep in the fridge for up to a week. Use it as you would normal jam, or on toppings for porridge and yogurt etc.

You can buy chia seeds in most supermarkets now and they are packed with good stuff -protein, omega-3 and omega-6.

This ‘jam’ will also give you natural and fresh nutrients from the fruit, which can often be lost during cooking.
