I served these on the recent Paleo cook and dine and they went down really well. Just what you need when you have to have that chocolate hit!
Ingredients:
2 large eggs (free range) whisked gently
3/4 cup maple syrup
2 oz dark chocolate (70% plus cocoa solids)
1/2 cup cocoa powder
1/4 cup coconut flour
1/4 cup ground almonds
1/2 tsp salt
1 tsp vanilla
1/2 cup coconut oil
(1 cup (American) is equivalent to 236ml)
Method:
Preheat the oven to 160degC (fan) or 180degC. Grease and line a square 9in x 9in tin
In a saucepan, melt the coconut oil with the cocoa and the chocolate. Once all melted take off the heat and add the maple syrup. Stir well and add the eggs, vanilla, coconut flour and ground almonds. Pour the mix into the prepared tin and bake for 20-25mins until the edges are firm but the middle slightly soft. Leave to cool completely in the tin, then cut into 16 squares.
